Nikki is a registered dietitian and licensed dietitian through the Minnesota Board of Nutrition and Dietetics. When not in the kitchen, spending time with loved ones and traveling are her favorite activities. Married with a family that includes a young son, a dog and a cat, she makes time for meal planning and cooking for the whole lot.

    When asked what she loves most about her work as a dietitian, Nikki shares, “The people I get to meet and help. If I can bring just a fraction of this relief to my clients, I’ll be thrilled.” “I suffered a lot of different symptoms after my concussion and know my nutrition played a huge role in my healing process and where I am today. “Fortunately I stumbled on a Dishing Up Nutrition podcast on just that topic full of nutrition advice that helped me immensely.” Nikki’s main goal was accomplished when she healed her brain and improved her memory and concentration. In the process her gut health also improved, sugar cravings went away, and she slept better. “Eating the Weight & Wellness Way has saved my brain, literally.” After suffering a concussion with a multitude of related symptoms, Nikki felt lost. Nikki has seen firsthand the tremendous impact nutrition can have on your brain and body.
